
Simple duck soup
Description
A hearty first course. Serve the soup hot.

Step 1
First, prepare the carcass. If necessary, you can remove the skin. Cut into small pieces, place in a pot, and cover with water.

Place over heat and bring to a boil, then add salt, peppercorns, and your favorite spices. And don't forget the bay leaf!

Boil for about 60 minutes.

Meanwhile, prepare the vegetables. Grate the carrots, cut the potatoes into cubes, chop the onion into small cubes, and press the garlic.

Place a frying pan over heat and add a little vegetable oil. First, sauté the onion (until golden), then after a couple of minutes add the chopped carrots and garlic. Cook for a few more minutes until the smell of garlic appears.

If the broth and duck meat are ready, add potato slices, fried vegetables, and two tablespoons of white rice to the pot. Cook for 20–40 minutes (until the potatoes are done).

The finished soup should be covered with a lid so that it can steep for another 10 minutes.

Serve the duck soup only hot. You can also add sour cream or sprinkle with fresh herbs when serving. It will be very delicious!
