
Pumpkin and chicken soup
Description
Hearty and aromatic soup. Here is a simple recipe for pumpkin and chicken soup. First, thoroughly rinse and boil your chicken. While it's cooking, prepare the vegetables. Once the vegetables are ready, blend them into a puree using a blender. Adjust the soup's thickness to your preference by adding more or less chicken broth. Good luck! Serve hot, ladled into bowls.

Thoroughly rinse the chicken and place it in a pot, cover with water, and bring to a boil. Then drain the water. Rinse the chicken and the pot once again. Simmer for about two hours, skimming off the foam. Meanwhile, peel and dice the vegetables into cubes.

In a heavy-bottomed pot, melt the butter and sauté the onion until translucent. Then add the potatoes and cook for a few more minutes, stirring. Add the peeled and chopped pumpkin and cook until it lightens in color.

Pour in the chicken broth, but not all of it—just enough to barely cover the vegetables. Simmer over low heat until the vegetables are cooked through.

Remove the pot from the stove and use a blender to turn the vegetable mixture into a puree.

Return the mixture to the saucepan, diluting it with broth. Add salt, nutmeg, and celery to taste, as well as pieces of meat. Bring the soup to a boil, then remove from heat.
