
Cottage cheese soup

By the way, kids really love this soup — they gobble it right up, without any "I don't like this" or "I hate that sort of thing." So, moms, take note! ;) Here's the recipe for "Friendship" Cheese Soup: 1. Peel the vegetables. Cut the potatoes into small cubes and the carrots into thin strips. Leave the onion whole! 2. Place a pot of water or broth over heat. Once it boils, add the potatoes, bay leaf, and the whole onion. Skim off excess starch with a ladle. 3. While the potatoes are cooking, gently sauté the carrots in a small amount of butter. I mean "gently sauté," not fry — the carrots should absorb the buttery flavor, soften and become tender, not turn brown. 4. When the potatoes are halfway cooked, remove the onion and add the sliced processed "Friendship" cheese. For easier slicing, place the cheese in the freezer for a couple of hours before cooking. 5. Once the cheese has completely melted (you'll need to stir the soup gently for several minutes), add the sautéed carrots. 6. A few minutes later, when the vegetables are fully cooked, turn off the heat, stir in a finely chopped garlic clove, and let the soup rest for a moment. 7. Ladle into bowls and top with finely chopped fresh herbs, grated cheese, and croutons. Enjoy and reminisce — this is the taste of childhood, after all... :) Now you know. Serve the soup hot.
