
Soup with fresh boletus mushrooms

The soup is simple and quick to prepare. Here's a recipe for a delicious and easy bolete mushroom soup. Cooking it is easy – just a few steps. First, deal with the mushrooms – wash them, chop, and boil for 40 minutes. Drain the mushrooms in a colander, strain the broth, and use it to cook the potatoes. Meanwhile, sauté onions, carrots, and mushrooms in a frying pan. Then add them to the soup with the potatoes. Next, add the vermicelli, and after 5 minutes add black peppercorns and a bay leaf. A couple of minutes later, remove the soup from heat. Serve hot, garnished with fresh herbs and sour cream. Ladle into bowls and serve.

Rinse the mushrooms thoroughly under running water and cut them into pieces. Place the mushrooms in a pot with salted water, bring to a boil, and cook for 40 minutes. Then remove them from the broth and drain in a colander.
