
Mushroom soup with fresh chanterelles
Description
Hearty and aromatic soup. The honey mushrooms are already on the table, so it's time to start preparing this delicious soup. Rinse and boil the honey mushrooms for 40 minutes. While they are cooking, sauté onion and carrots in a frying pan, then add them to the soup. After 15 minutes, add potatoes, followed by garlic, bay leaf, and clove. Five minutes later, add the remaining spices, then remove from heat. Let the soup steep for 15 minutes before serving. The soup is ready to serve.

Sort the mushrooms, clean them, and rinse thoroughly. If the mushrooms are large, slice them.

Pour cold water over them, place on the stove, and bring to a boil. Skim off the foam as it forms. Once the water boils, reduce the heat to medium and cook the mushrooms for 40 minutes.

Sauté the chopped onion in a frying pan, then add the grated carrot. Fry together for 10 minutes, then transfer the vegetables to the soup. Mix well and cook for 15 minutes.

Then add the potatoes, and after 15 minutes add the bay leaf, chopped garlic, and cloves. Five minutes later, add coriander, salt, and pepper to taste. When the potatoes are cooked, remove the soup from heat and let it steep for 15 minutes. Then serve.
