
Asparagus soup
Description
A hearty first course. Asparagus shoots come in green, white, pink, and purple. Peel all the vegetables and rinse them under cold running water. Cut off the tips of the asparagus stalks and halve them lengthwise. Chop the remaining stalks into small pieces. Slice the white part of the green onion into rings, and cut the green tops diagonally into 3-4 cm pieces.

Pour water into a saucepan, add a bouillon cube, 6 thin slices of ginger, and the white part of the scallion. Bring the broth to a boil, reduce the heat, and simmer for 5 minutes.

Cut the chicken fillet into thin strips, add the meat and asparagus to the broth and cook for 2 minutes.

Stir the soup, add the young spinach leaves, soy sauce, and cook for another 2 minutes.
