
Soup from salted mushrooms
Description
Boil the mushrooms, meanwhile sauté the onions, add them to the pot, followed by the remaining ingredients. The soup will cook quickly. When serving the soup with salted mushrooms, place a couple of boiled potatoes and a stem of green onion into each bowl. It looks simple, rustic, but so delicious. Serve with fresh herbs and sour cream.

Cut the mushrooms into pieces, put them in a pot, pour in water, and place over heat. After boiling, cook for half an hour. Peel the potatoes and put them to boil whole in a separate pot.

Finely chop the onion and fry in vegetable oil.

Place the sautéed mixture into the pot with the mushrooms and cook for 10 minutes.

Then pour in the milk, mix and cook for another 5 minutes.

Meanwhile, beat 2 eggs in a bowl or glass.

Pour the eggs into the soup, stirring constantly. Then cook for another 2-3 minutes. Sprinkle the finished soup with fresh dill right in the bowl. Taste for salt—since the mushrooms are salty, you may not need to add any, or just a little to taste. Serve the soup with boiled potatoes and green onions on the side.
