
Vegan mushroom soup

Place the peeled onion and carrot sliced into rounds into a saucepan and cover with cold water. Add bay leaf, peppercorns, and simmer for half an hour.

Slice the mushrooms into pieces and finely chop the remaining onion.

Pour vegetable oil into a hot skillet and add mushrooms and onions. Add oregano, paprika, pepper, and sauté for 5-7 minutes.
