
Barley and mackerel soup
Description
The soup is simple and quick to prepare. Making pearl barley soup with mackerel is easy. First, cook the pearl barley, then gradually add the remaining ingredients. If desired, you can add 1-2 tablespoons of tomato paste to the sautéed mixture, along with any favorite spices to taste. The soup turns out nutritious, aromatic, and delicious—a perfect quick addition to your everyday menu. Serve with fresh herbs and sour cream.

Prepare all the ingredients.

Rinse the barley, soak it in water, and leave for several hours (I leave it overnight). Then rinse the grain again.

Transfer the barley to a saucepan, add water, include the bay leaf, and cook until done (about 30 minutes).

Then add the diced potatoes and cook for another approximately 10 minutes (until the potatoes are cooked).

Meanwhile, prepare a sauté of diced onion and grated carrot. When the potatoes are ready, add the vegetables to the pot.

Next, add the canned saury (I added it together with the liquid). Mash the fish with a fork beforehand and, if necessary, remove any large bones.

Bring the soup to a boil, adjust seasoning for salt, and add fresh herbs. Remove the pot from heat and let it steep, covered, for another 10–15 minutes. The mackerel and barley soup is ready.
