
Barley soup with canned fish

Hearty and aromatic soup. This recipe is a real lifesaver when you don't have much time for lengthy cooking. All family members will appreciate this delicious and filling soup! It's best to plan this dish in advance by soaking the grain overnight, so it'll take almost an hour—and the soup is ready! You can use different kinds of canned fish, either in its own juice or with oil. Be sure to pour the liquid into the pot as well, for extra flavor. Besides salt, you may add pepper or any other spices to taste, or simply stick to a bay leaf. Save this recipe, serve in bowls, and enjoy!

Prepare all the ingredients.

Rinse the grain and soak for several hours, or you can leave it overnight.

Then rinse the barley once more and transfer it to a saucepan. Add water and cook until fully done. Depending on the soaking time, it will take from 30 to 50 minutes.

When the barley is almost ready, add the diced potatoes.

In a skillet, sauté grated carrots and diced onions until soft. Transfer the skillet contents to a pot. Cook everything together until the grain and potatoes are done.

Drain the liquid from the canned fish into a pot, and flake the fish into pieces. Add the prepared fish 5 minutes before all ingredients are done, and adjust the soup for salt.
