
Rhubarb soup

A hearty first course. Here is a simple recipe for rhubarb soup. It is recommended to use young rhubarb leaves, as they contain the highest amount of beneficial vitamins. Be sure to add boiled eggs and dill to the finished soup to make it more filling. Enjoy! The soup is ready to serve.

We cook a simple broth based on chicken meat, which usually takes 30 to 40 minutes. We salt the water.

We wash the potatoes and peel them.

Slice the potatoes into pieces.

Wash the rhubarb and remove the leaves from the stalks. Chop the leaves, but not too finely.

Strain the prepared broth. Bring it to a boil again, then add the rhubarb leaves. Add the potatoes and cook until done.

When the potatoes are almost cooked, add the chopped green onions. Then remove the soup from the heat and let it stand, covered, for 15 minutes.
