
Tomato soup
Description
Choose juicy and ripe tomatoes to make the soup rich and delicious. I don't use potatoes or sautéed vegetables, so preparing the soup won't take much time. You can serve it with fresh herbs (parsley, cilantro) or croutons. Serve with herbs and sour cream.

Peel the ginger and grate it finely. Peel the carrot and wash the celery, then chop the vegetables.

Heat a saucepan with vegetable oil, add ginger, carrots, and celery, and sauté for 2 minutes.

Blanch the tomatoes with boiling water in advance and remove the skin, then cut into small pieces.

Place the tomatoes in the pot with the vegetables, season with pepper and salt, and add granulated sugar.

Transfer the contents to a blender or use an immersion blender and puree.

In a saucepan, heat the vegetable oil, add the cumin seeds, and fry them.

Return the tomato puree to the saucepan, add cumin, and pour in 1-1.5 cups of water. Bring to a boil and simmer for 3-4 minutes, adding salt to taste.
