
Mushroom soup with buckwheat
Description
The soup is easy and quick to prepare. Buckwheat groats go perfectly with oyster mushrooms. The soup turns out very aromatic and delicious during cooking. You can add sour cream to the finished soup. Serve the soup hot.

1. First of all, pour about two and a half liters of water into a pot and place it on the stove. Now peel the onion and cut it into pieces.

2. Peel the carrots and cut them into pieces as well. Then sauté the carrots and onions in oil in a frying pan until golden brown. When the water in the pot comes to a boil, transfer the fried onions and carrots into the pot.

3. Rinse the oyster mushrooms, then cut them into pieces (small mushrooms can be left whole), and place them in a pot. Boil over medium heat for about fifteen minutes. Rinse the buckwheat and add it to the pot, then continue cooking for another five minutes.

4. Peel the potatoes, cut them into pieces, and add to the pot. Season with salt and pepper, and cook for another ten to fifteen minutes (until the potatoes are done).
