
Pea soup with young peas

Place the peas in a saucepan, add the washed and finely chopped herbs. Add salt and sugar, pour in enough water to just cover the peas, and simmer for about 15 minutes after boiling.

Drain the cooking liquid into a separate container, and blend the cooked peas with herbs in a blender (or use an immersion blender directly in the pot) until smooth.

Transfer the puree back to the saucepan, add the cream and butter. Pour in the broth to achieve the desired soup consistency—adjust the amount to your preference. Mix well and bring to a boil. Add salt to taste and serve.
