Prepare all the necessary ingredients for making mung bean soup. Rinse the mung beans thoroughly under running water.

Cut the hot pepper into thin strips.

Grate the ginger on a grater.

Cut the tomatoes into random pieces.

Pour the water into a saucepan and place over heat. Once the water comes to a boil, add pepper, turmeric, ginger, and mung beans to the saucepan. Cook for 40 minutes. After this time, the mung beans should look approximately like this.

Make sure the mung beans don't overcook and turn mushy; it's better if they remain firm. Next, add chopped tomatoes, salt, brown sugar, and parsley to the pot.
