
Chanterelle and bean soup

Perfect for lunch. Chanterelle mushroom and bean soup is very easy to prepare, yet results in a delicious and satisfying soup! To make this soup, you'll need fresh chanterelles, smoked sausage, a few simple vegetables, cooked or canned beans, tomato paste or sauce (homemade is best), and chicken broth (broth made from a cube also works quite well). Cut the carrots into very small cubes.

Place the pot over medium heat and pour oil into it.

Add the chanterelles, season with salt and pepper, and fry until golden brown, stirring constantly.

While the mushrooms are frying, finely chop the onion (do this very quickly).

Finely chop the garlic.
