Peel the potatoes and cut them into medium-sized cubes. Cut the onion into smaller cubes.

Thoroughly rinse the chanterelles and dry them with paper towels. Large mushrooms can be cut in half, while small ones can be left whole.

Heat a skillet with vegetable oil over medium-high heat. Sauté the chanterelles until golden brown and excess moisture has evaporated.

Pour vegetable oil into a heavy-bottomed pot, add onion, and fry until translucent.
