
Chicken heart soup with dumplings
Description
A hearty first course. Boiled chicken hearts are very tasty, so they make excellent soups. To make the soup more filling, add dumplings (they are very easy to prepare). To make chicken heart soup with dumplings, we'll also need regular chicken broth (you can boil a chicken leg or thigh)—it's more delicate than broth made from hearts. By the way, you can also confidently add the boiled chicken meat to the soup later. Check out the recipe. Serve with fresh herbs and sour cream.

Thoroughly rinse the chicken hearts and trim off any excess fat.

Place the hearts in cold water and start boiling. Add onion, carrot, bay leaf, and spices. Be sure to skim off the foam. I usually discard the broth from the hearts and make the soup later using regular chicken broth. In my opinion, the broth made from hearts isn't very tasty.

Then drain the hearts and vegetables in a colander. You can discard the broth, onions, and spices. Place the chicken broth on the stove and bring to a boil.

Add the hearts and boiled carrots (previously cut into strips or cubes) to the broth to simmer.

While the soup is cooking, prepare the dumpling dough. Beat the egg, then season with salt and pepper.

Add the flour. The dough should have the consistency of thick sour cream, but it should drip off the spoon.

Mix well to ensure there are no lumps.

Carefully drop the dough into the boiling soup by teaspoonfuls. It should set immediately.

Simmer for a couple of minutes, then turn off the heat. Serve the chicken heart soup with fresh herbs.
