
Rabbit soup with potatoes and noodles

Prepare all the ingredients.

Rinse the meat and place it in a pot. Add the onion, peeled from the outer skin, peeled carrot, bay leaf, peppercorns, and salt to taste. Simmer gently until the meat is fully cooked.

Meanwhile, cut the potatoes into cubes.

Sauté the remaining carrots and onions in a pan until soft.

Strain the prepared broth, separate the meat from the bones, and return it to the pot. Add the potatoes and sautéed vegetables. Cook for about 15–20 minutes, or until the potatoes are tender.
