
Rabbit and buckwheat soup
Description
The recipe won't take much time. Depending on whether you're cooking the soup for an adult or a child, the preparation method may vary slightly. For children's meals or for those following a diet, the onion and carrots are not sautéed but added to the soup raw along with all the other ingredients. Otherwise, the order of adding ingredients will be the same. If desired, you can add garlic, tomatoes, or any spices. Serve with fresh herbs and sour cream.

Prepare all the ingredients.

Rinse the rabbit, place it in a pot, and cover with water. Add a whole onion, peeled of its outer skin, pieces of chopped carrot, peppercorns, bay leaf, and salt to taste. Simmer the broth over low heat until the meat is fully cooked.

While the meat is cooking, sauté the onion and carrots in a frying pan.

Cut the potatoes into cubes.

Rinse the grain and, if necessary, sort through it.

Strain the ready broth. Remove the meat from the bones and return it to the pot.
