
Salmon soup with cream
Description

Peel and wash all the vegetables and herbs. Cut the leek into rings, the potatoes into cubes, the dill finely chopped, and grate the carrot on a coarse grater.

Rinse the salmon fillet and cut into cubes.

In a heavy-bottomed pot (a kazan or casserole dish), melt the butter over medium heat. Add the sliced leek and sauté, stirring, for 8 minutes, until the leek becomes semi-transparent and golden.

Add broth or water, potatoes, carrots, black pepper, and salt to the fish. Bring the soup to a boil and cook for 10 minutes, until the vegetables are fully cooked.

Add the salmon pieces and cook for about 5 minutes, until the salmon is cooked through.

Pour in the heavy cream, add the bay leaf, mix the soup, and cook for another 2 minutes.
