
Lentil soup, red, fasting version

Prepare all the ingredients. Peel the carrots and onion. Chop the celery, carrots, garlic, and onion.

In a saucepan, heat the olive oil and sauté the onion and garlic for about 2 minutes. Add cumin and turmeric, and cook for another minute.

Place the carrots and celery in a saucepan, sauté for 2 minutes together with the onion and garlic. Then add the red lentils, mix with the vegetables.

Add water to the pot and bring to a boil. Cook over medium heat until the red lentils become soft, about 30 minutes. Season with salt and pepper to taste, add lemon juice. Mix well. Simmer for another 3 minutes, then remove from heat. Before serving, garnish the red lentil soup with fresh cilantro leaves.
