Perfect for lunch. Be careful when preparing nettle soup, as nobody wants blisters on their hands—so my advice is to get some rubber gloves. But! The result is absolutely worth it. This light spring soup will delight the whole family. And I won't even mention how healthy nettle is. However, avoid gathering nettle in the city, especially near roads. 1. Prepare the ingredients for the soup. Wash the vegetables and all the greens thoroughly, including the nettle. It's best to wash and chop the nettle while wearing rubber gloves, carefully, as it can burn your hands. Bring the water for the soup to a boil and add salt.

2. Finely chop the peeled vegetables: cut the onion and potatoes into cubes, and the carrots into strips (or use a coarse grater).

3. Add the vegetables to the boiling water or broth and cook for 10 minutes.

4. Add pasta to the soup, cook for another 7 minutes over low heat.

5. Let the washed greens drain well, then chop them not too finely.

6. Add herbs to the soup, cook for another 2-3 minutes — and the soup is ready. Remove it from the heat.

7. The ready nettle soup should steep for a while to develop a rich flavor and color. Serve the soup with sour cream, boiled egg, or simply on its own. Nettle soup can be prepared with water or meat broth.
