Royal mushroom soup

Description

All cream soups should be prepared in portions sufficient for one serving, no more. And mushroom soup made from royal mushrooms is no exception. Only freshly prepared soup is incredibly delicious and aromatic. The soup is ready to serve.

    Prepare all the necessary ingredients. Peel and wash the vegetables. Wash the mushrooms and dry them.

    Cut the potatoes into cubes and cover with water. Add a little salt and cook until done. Do not discard the cooking liquid.

    While the potatoes are boiling, finely chop the onion and sauté in butter until golden brown. Place the boiled potatoes and fried onion into the pot where you will purée the soup.

    Boil the mushrooms, cut into 4 pieces, in the potato cooking water for about 5-7 minutes. While the mushrooms are cooking, puree the onion and potatoes using an immersion blender. Then add the cooked mushrooms to the same mixture.

    Also add sour cream, blend the entire mixture, and gradually pour in the potato-mushroom broth. Add as much broth as you need to achieve your desired soup consistency. If necessary, season with a little more salt. Heat to boiling, then reduce the heat and simmer for just 1-2 minutes. The soup is ready!
