
Root Vegetable Soup
Description
The soup is easy and quick to prepare. Root vegetable soup turns out to be hearty and very aromatic. You can add other herbs and spices to taste while cooking. This dish is especially delicious with sour cream, yogurt of any fat content, or mayonnaise. Serve it hot. The soup is ready to serve.

Prepare the listed ingredients. You can use any root vegetables that complement each other in flavor.

Peel the root vegetables and rinse them in water. Cut half of the carrot and potato into medium cubes, and add the chopped vegetables to a saucepan. Pour in water, add bay leaves, and boil the vegetables over moderate heat for about 12–15 minutes. Using parsley root, chop it the same way as the carrot.

Grate the remaining half of the carrot on a fine grater, and chop the onion into small cubes.

Sauté the carrots and onions in vegetable oil in a skillet for 3-4 minutes until soft.

Place the sautéed mixture in a saucepan and boil for another 2-3 minutes, adding salt and vegetable seasoning.

Rinse the parsley, chop it, add to the pot, and simmer the soup for another minute, then turn off the heat.
