Bean soup with meat from canned beans

Description

Hearty and aromatic soup. You can use beans in light sauce or in tomato sauce—choose according to your taste. Add the classic set of vegetables, as well as: celery stalks or parsley root, tomatoes, bell peppers, etc. Don't forget about spices and herbs—they will give the dish a bright, juicy flavor. If desired, sprinkle the soup with chopped fresh herbs before serving. The soup is ready to serve.

    Prepare the listed ingredients. Rinse the beef in water and remove tendons and films from the meat. You can use bone-in beef, but avoid pieces with excessive fat—the soup will turn out more flavorful and aromatic.

    Cut the meat into portion pieces; if using beef ribs, cut them so that each piece has one rib. Place in a pot or cauldron.

    Pour in hot water and place the container on the stove. Bring to a boil and simmer for 2–3 minutes, skimming off the foam. If desired, you can simply pour off the cloudy liquid, rinse the container, then return the beef to it and cover again with boiling water. Next, simmer the meat over medium heat for 30–40 minutes. This should be done separately from the other ingredients to ensure the beef becomes tender and juicy.

    After the specified time, peel the potatoes, carrots, and onion, and rinse the vegetables under water. Cut the carrots and potatoes into medium cubes, and finely chop the onion. Instead of red onion, you can use white, yellow, or green onion.

    Add the chopped vegetables to the meat broth and cook for another 15–20 minutes until the potatoes are tender. You can optionally add bay leaves.

    Add the seasoning or spices to taste, then add the beans in tomato sauce. Stir in chopped dill or parsley, if you like herbs in your soups. Since tomato juice slows down cooking and canned beans are already cooked, they should be added at the very end. Simmer the soup for 1-2 minutes and taste to adjust seasoning.

    Pour the hot soup into deep plates and serve with sour cream, mayonnaise, garlic sauce, etc. Enjoy your meal!
