
Canned Bean Soup
Description
A hearty first course. You can add any vegetables you like to this soup, for example, potatoes, zucchini. If you don't have meat broth at home, cook a light vegetable broth or simply add water to the soup. This way, you'll get a delicious and filling dish that's also suitable for fasting. You can substitute barley grits with any other grain. Serve hot in bowls.

In a saucepan, heat the vegetable oil, press in the garlic, and sauté for 2 minutes.

Finely chop the onion and add it to the garlic. After a couple of minutes, add diced celery, carrots, and cauliflower. Sauté all the vegetables for about 5 minutes.

Then mix the tomato paste with salt, pepper, and spices. Stir into the vegetables.

Transfer the vegetables to a saucepan, add the barley, beans, and bay leaf. Pour in the broth and bring to a boil.

When the soup begins to boil, skim off the foam, cover with a lid, and reduce the heat. Cook for 30 minutes to an hour, checking the grain's doneness.

Before serving, remove the bay leaf and sprinkle the soup with herbs.
