
Canned white bean soup
Description
The recipe won't take much time. A simple meat soup with beans, without any special tricks or secrets. This version features the classic combination of pork and beans. We'll use canned beans for speed, so there's no need to soak and cook them for a long time.

Drain the liquid from the canned beans and rinse them.

Now let's make the broth. Bring the water to a boil, add the pork, reduce the heat, and simmer for an hour and a half.

Meanwhile, finely chop the onion and garlic, and sauté in vegetable oil until translucent.

When the pork is cooked, remove it and separate the meat from the bone. Add the grated carrots, chopped celery, and beans to the pot. Simmer for about 20 minutes.

Return the pork to the soup. Then add the sautéed onion with garlic, Provence herbs, Tabasco, and salt and pepper. Chop the parsley, add it to the soup, turn off the heat, and let it steep, covered, for about 10 minutes.
