
Seafood cocktail soup
Description
The bright flavor of the soup is greatly enhanced by coconut milk. However, it can be replaced with 20% cream, which should be added after the seafood cocktail comes to a boil. Do not boil the soup again, but let it steep, covered. Serve the soup hot.

Prepare the ingredients.

Heat the oil in a heavy-bottomed saucepan. Lightly sauté the onion and celery until soft, stirring, for about 3 minutes, taking care not to let the vegetables brown.

Add the chopped garlic and heat for one minute.

Place the chopped tomatoes in their own juice and simmer for 5 minutes over low heat. You can add a teaspoon of sugar for a balanced flavor.

Pour in the fish broth and simmer for a couple of minutes.

Add the coconut milk and cook for a few more minutes. Taste, then season with salt and pepper to taste.

Place the seafood cocktail in the pot. Bring to a boil and simmer for 2 minutes.
