Hearty and aromatic soup. The recipe for squid soup is very simple, and I would recommend it to those who are on a diet. This soup is versatile—potatoes can easily be replaced with rice or celery (making it even more diet-friendly). By the way, you can add processed cheese to the soup, but that will make it quite caloric, making it perfect for feeding men :) Good luck with your cooking! Ladle into bowls and serve.

    Pour a liter of water into a saucepan and place over heat. Meanwhile, thoroughly rinse the squid under running water. It's better to buy pre-cleaned squid at the store to avoid the hassle of cleaning it yourself.

    After the water comes to a boil, we generously salt it and add the whole squid body, cooking for three minutes (no longer, otherwise it will become rubbery and tasteless), then cool it by placing in cold water. After that, we slice it into half-rings.

    By the way! Don't pour out the liquid from under the squid—it's the broth for our future soup. Return the pot to the stove (you can add more water if needed) and bring it to a boil. Meanwhile, peel and chop the potatoes. Once the water is boiling, add the chopped potatoes to it.

    While the potatoes are boiling, prepare the sautéed onion and carrot mixture. First, fry finely chopped onion in vegetable oil, then add grated carrot (using a medium grater). When the potatoes are almost ready, add the sautéed mixture to the pot and simmer over low heat for about 5 more minutes. By the way, don't forget to add bay leaf and your favorite seasonings!

    After sautéing, add the squid and finely chopped herbs. Actually, you can add the squid right after sautéing, but you need to be very careful—make sure the squid soup is no longer boiling over high heat, but barely simmering. Good luck!
