
Turkey soup with cabbage
Description
The soup is simple and quick to prepare. Turkey meat, popular in the USA and Canada, is considered lean meat (although you wouldn't guess that by looking at Americans, right? ;)), so various turkey dishes are recommended for people who want to lose weight. One of the tastiest turkey soups is turkey and cabbage soup, a recipe for which was given to me by a good acquaintance living in Montreal. According to him, turkey and cabbage soup is one of the most popular first courses served in simple, non-gourmet cafes and canteens there. Well then, let's try making something similar ourselves. Serve with fresh herbs and sour cream.

Ingredients.

In a soup pot, bring 1.5 liters of water to a boil. Add the turkey meat to the boiling water. Simmer the turkey for about 50 minutes over medium heat.

While the broth is cooking, let's prepare the vegetables. Cut parsnip and celery into thin julienne strips, carrots into large cubes, onions into thick julienne strips, and simply crush the garlic with the flat side of a knife.

In a skillet, sauté the onion, carrot, parsnip, and celery in olive oil until the carrot is tender and the onion is golden. Meanwhile, add garlic and bay leaf to the broth.

When the broth is ready (that is, when the turkey has been simmering in water for 50 minutes), add the spices, dried herbs, and sautéed vegetables to the pot. Bring to a boil and simmer for 10 minutes over low heat, then add the potatoes to the soup and cook for another 15 minutes.

Thinly slice the cabbage.

Add it to the soup after the potatoes. Cook the soup for another 15-20 minutes, until all ingredients are fully cooked.

All that remains is to pour the ready soup into bowls, sprinkling with fresh herbs. :)
