
Turkey soup
Description
Turkey meat is usually fried or roasted. But it also makes a very tasty broth. The broth turns out clear and moderately fatty. Turkey soup is also valued for being low in calories.

1. Wash the chicken wings for the broth thoroughly and cut them into 2-3 pieces. Wash the carrots, onion, and celery stalk well, peel, and cut into large pieces.

2. Pour water into a large pot. Add meat pieces, large vegetable pieces, a little salt, and bring to a boil. Reduce the heat and simmer for about 60 minutes. Remember to skim the foam off the broth.

3. Slice the purple onion into thin half-rings. Finely chop the chili pepper and garlic. Wash the tomatoes, peel them, and grate on a grater. In heated oil, lightly sauté the onion, pepper, and garlic, then add the grated tomatoes. Simmer the vegetables for about 15 minutes.

4. Remove the meat from the broth. Separate the meat from the bones and chop finely. Strain the broth. Add the sautéed vegetables to the soup.

6. When the soup comes to a boil, add finely chopped parsley, adjust salt to taste, and cook for 2-3 minutes. The turkey soup is ready.
