
Goose meat soup

Take any part of a goose (for example, the wings). Remove any remaining feathers, rinse under water, and dry. Bring clean water to a boil in a saucepan and simmer the wings for an hour and a half. Separate the meat from the bones and place it into the broth.

Peel and wash the onion and carrot. Chop the onion into small cubes, and cut the carrot into strips or grate it on a coarse grater. Heat vegetable oil in a skillet and sauté the vegetables until golden brown.

While the vegetables are frying, take a piece of dough and form small balls by pinching off pieces with your hands. They should be no larger than a cherry. Drop the balls into the broth.

Peel the potatoes and wash them under running water. Cut the vegetable into cubes or strips. Add to the boiling broth together with the sautéed carrots and onions.

Rinse the millet under running water. Add it to the soup. Reduce the heat to the minimum and cover the pot with a lid. Cook the soup for fifteen minutes.

Five minutes before it's ready, add coriander, chili pepper, garlic pressed through a garlic press, and bay leaf to the soup. Remove the bay leaf from the soup before serving. Season the soup with salt to taste and let it steep. Serve the soup hot.
