
Goose soup with noodles
Description
A hearty first course. The base of this soup is goose broth. The ingredients of this simple yet delicious soup are potatoes, sautéed carrots and onions, and noodles. You can use store-bought noodles or make them yourself if you have time. Thanks to the rich, flavorful, and fatty goose broth, the dish turns out filling, aromatic, and appetizing! It will be enjoyed by both adults and children, even the littlest ones. Serve with fresh herbs and sour cream.

Prepare all the ingredients. Any part of the chicken carcass is suitable for the broth. It's best to use the back, legs, or wings.

Rinse the meat under running water and remove any remaining feathers, if present. Peel the carrots, remove the outer skin from the onion, and thoroughly rinse both. Place the goose and vegetables into a pot. Add water, bay leaf, and whole peppercorns. Bring to a boil, skim off the foam, then simmer over low heat for about 1–1.5 hours (until the meat is tender).

While the broth is cooking, peel the potatoes and cut them into small cubes.

Dice the remaining onion and grate the carrot on a coarse grater. Sauté the vegetables in vegetable oil until soft. You can add your favorite spices during cooking, as this will help them release their aroma better.

Strain the ready broth and pour it into a clean saucepan. Add the potatoes and cook for about 20 minutes.

Separate the goose meat from the bones. Measure the required amount of vermicelli. Five minutes before the potatoes are done, add the meat and vermicelli to the pot. Also add the contents of the frying pan and adjust the seasoning with salt.

The goose soup with noodles is ready. Let it steep for 10-15 minutes and serve.
