
Chanterelle mushroom soup
Description
The soup is simple and quick to prepare. This chanterelle soup is easy and fast to make. You can cook it using any meat or vegetable broth, or even water—though in the latter case, you should add more oil. I'm using chicken broth. Fresh chanterelles work well, but frozen or dried ones are also suitable.

Take the ingredients for preparing the soup.

Peel and wash the onion and carrot, finely chop them, and place them in a frying pan. Add sunflower oil and lightly sauté over medium heat.

Pour the broth into a saucepan.

Peel the potatoes, wash them, cut into cubes, place in a pot, and start cooking the soup.

Add the onion and carrot.

Thoroughly wash the chanterelles under running water. Add to a pot.

Season the soup with salt and pepper and cook for 25–30 minutes, until all ingredients are cooked through. Add the minced garlic at the end.
