
Beef soup with tomato paste
Description
Perfect for lunch. Beef on the bone works well for making this soup. That's exactly what I used. You can add any spices—you can't go wrong with an abundance of them. Happy cooking! Serve the soup hot.

Pour water into a large pot. Add bay leaf, peppercorns, peeled onion, one carrot, and beef rinsed under running water. Add salt and place over low heat.

Simmer the broth for two hours over low heat. Then remove the vegetables and beef from the pot.

Finely chop the peeled garlic cloves. Sauté them together with tomato paste in a pan greased with oil.

Then add the onion, cut into rings, to the mixture. Fry for another 7 minutes until the onion becomes soft.

Peel the carrot, wash it, and grate on a coarse grater. Add to the pan with onion, garlic, and tomato paste. Season with salt. Sauté the mixture for about five minutes over low heat.

Add the vegetable sauté to the pot with the broth. Add the meat separated from the bone and diced potatoes.

Add the washed rice, spices, salt, and bay leaf. Simmer the soup over low heat for 10 minutes. Add the dried herbs at the very end.
