
Beef and potato soup
Description
A hearty first course. Here is a simple recipe for beef and potato soup. This recipe uses quite a lot of vegetables: cabbage, potatoes, carrots, leek, garlic, and sweet pepper. You will also need a good piece of beef. Let the finished soup steep, covered, for about 10–15 minutes before serving. Good luck! Serve the soup hot.

Slice the leek into half-rings.

Cut the carrot into slices and then in half again.

Cut the pepper into thin strips.

Grind the garlic.

Rinse the beef and cut it into several pieces.

In a large saucepan, heat the oil. Sauté the leek for 5 minutes, then add the garlic, carrots, and pepper, and cook for another 2–3 minutes. Remember to stir occasionally.

Add water to the pot, about 2-2.5 liters. Turn the heat to maximum.

Add beef to the soup.

Add bay leaf and parsley there as well.

Add salt and seasoning to taste.

Bring the soup to a boil and continue cooking over the lowest heat for 2 hours. Cook covered, stirring occasionally.

After an hour, taste the soup for salt and add more if needed. Meanwhile, cut the potatoes into cubes.
