
Pea soup
Description
The advantage of this recipe is that it can be made with either fresh or frozen peas. Before serving, you can garnish the soup with aromatic croutons and pieces of "Feta" cheese, for example. It's a great idea for both adults and children. Serve the soup hot.

1. Finely chop the onion and celery. Place in a frying pan with a small amount of oil and sauté for a few minutes.

2. Meanwhile, boil the potatoes in salted water and mash them into a puree, adding butter if desired.

3. Add the peas, sauté for a couple of minutes, then pour in hot water or broth. Simmer for about 5 minutes over low heat.

4. Salt, pepper to taste, add mashed potatoes and cream.

5. As soon as it boils, remove from heat and use a blender to puree. Return to the stove and heat slightly. Cut the bread into small cubes and toast in a dry skillet.

6. Add a little butter, salt, spices to taste, cheese cubes, and a couple of mint leaves if desired. Pour the soup into bowls, top with cheese croutons, and serve immediately.
