
Bean and bacon soup
Description
Hearty and aromatic soup. Beans contain as much protein as meat. The rich broth perfectly replaces meat broth in flavor. A satisfying, simple, and very tasty soup. To prepare it, you need to prepare the beans in advance: soak them in cold water and leave overnight. You'll need very few ingredients to make this dish. Serve hot in bowls.

1. Place the beans in a large pot or bowl, cover with water, and let soak overnight. After the required time, drain the water.

2. Heat a pot over medium heat, slice the bacon and place it into the pot, frying until golden brown. Dice the onion and mince the garlic. Add the onion to the bacon and sauté for 5-7 minutes, then add the garlic.

3. Cut the carrot and celery stalk into small pieces, add the vegetables to the pot, and sauté for another 2 minutes.

4. Add canned or ripe tomatoes, cut into pieces or mashed into a puree, along with tomato paste and beans. Pour in the broth, add all the spices, and bring the mixture to a boil. Simmer, covered, for about 45–60 minutes.

5. At the end of the process, season with salt and pepper to taste, then ladle the soup into bowls and serve.
