
Homemade Noodle Soup
Description
For the noodles, knead the dough using eggs or egg yolks. Then roll it out thinly, dry it, and cut into strips. Cook a broth from chicken and vegetables, then add the noodles, egg, and herbs. The amount of noodles is enough for two soups. Ready. The soup is ready to serve.

Prepare the ingredients for the soup and noodles.

Start with the noodles. Prepare a deep bowl, crack two raw eggs into it, and add salt.

Beat the eggs with a fork or whisk, as you would for an omelet.

Add the flour in parts, start kneading the dough.

Knead until you get a firm, elastic dough ball. I used 2 full cups of flour. The firmer the dough, the better the noodles will turn out.

Dust the table with flour. Divide the dough into 4 parts. Roll out each part as thinly as possible, until it becomes translucent.

Send the pasta sheets to dry. This may take about 15 minutes. Dry them on a clean cotton towel or paper.

Roll the dough into a convenient log and slice thinly.

Put the noodles back on the towel to dry completely. This will take 2-3 hours in summer, longer in winter.

Now, while the noodles are drying, let's prepare the soup. Place the meat in cold water over heat, add salt, and bring to a boil. Slice the vegetables thinly.

Simmer the broth for soup for 1 hour over low heat.
