
Cauliflower soup
Description
Cauliflower soup "Spring in Paradise" can be made using just cauliflower, or you can also add broccoli, carrots, and sweet pepper. Of course, the soup is delicious with plenty of vegetables, but I especially love the version made with just cauliflower. The cauliflower is first roasted in the oven, and then added to the soup, resulting in a more vivid and unique flavor. Serve the soup hot.

Prepare all the necessary ingredients. Rinse the cauliflower under running water and remove any damaged areas. Dry with paper towels.

Separate the cauliflower into florets and place them on a baking sheet lined with parchment paper. Lightly spray with olive oil and sprinkle with salt and nutmeg. Bake in the oven at 180°C for 15–25 minutes. All ovens cook differently, so keep an eye on it to ensure the cauliflower turns lightly golden but doesn't burn.

Chop the onion into small cubes and fry in vegetable oil until golden.

Pour in the broth and cream, cook for a few minutes.

Then add the baked cauliflower to the pot and cook for 15 minutes. The soup will become incredibly aromatic.

Purée the soup using a blender. You can blend the soup completely until smooth, or just slightly, leaving small pieces of cabbage.

The soup is ready. Serve it with garlic croutons and fresh herbs. Enjoy your meal!
