
Lentil soup with mint
Description
This soup can be served as a lunch; if desired, you can add croutons and fresh herbs. The soup can be cooked either in water or in any broth—chicken, mushroom. You can also add spices to taste.

Prepare the ingredients.

Peel the onion and carrot, wash the vegetables, and dry them. Cut the onion into cubes and the carrot into small pieces.

Peel and wash the potatoes, then dry them. Cut the potatoes into sticks.

Transfer the potatoes and lentils to a saucepan. Add water, place over heat, and cook for 20 minutes.

Heat the pan and add the oil, add the vegetables and fry for a few minutes over medium heat.

Add the fried vegetables and mint to the soup, cook for another 10 minutes. Add salt and pepper to taste.

The ready soup can be left as is, but it's better to blend it.
