
Lentil soup with cauliflower
Description
The soup is simple and quick to prepare. You can use as much of each ingredient as you prefer. The broth can be made from pork or turkey—choose according to your taste. Ladle into bowls and serve.

Prepare the necessary ingredients.

In 2.5 liters of water, cook a beef broth. Strain it. Remove the meat from the bone.

Rinse the lentils, cover with water, and let soak for 30 minutes.

Chop the bacon finely. Fry until translucent.

Add finely chopped onion to the fried bacon. Sauté for 5–7 minutes. If the bacon is too dry, add a couple of tablespoons of vegetable oil.

Finely chop the cauliflower and add it to the pan with the onion and bacon. Fry for 5-7 minutes, stirring.

Peel the tomatoes, chop them finely into small cubes. Add to the pan. Fry for 5-7 minutes, stirring.

Place halved potato tubers into the pot with the broth. Cook for 25 minutes until done.

When the potatoes are cooked, mash them with a masher. Add the lentils.

Add the sautéed vegetables with bacon. Turn on medium heat and cook for 15 minutes.
