
Lentil soup without potatoes
Description
The soup is easy and quick to prepare. It's hard to resist such a vibrant soup with crispy croutons! Both adults and children will happily eat it for lunch, especially if you serve it with sour cream or garlic mayonnaise.

Prepare the listed ingredients.

Peel the onion and carrot, rinse under water, and chop into small cubes. Pour 40 ml of vegetable oil into a non-stick saucepan or a cauldron, and sauté the chopped vegetables until golden brown, about 4-5 minutes.

Rinse the lentils in water several times and drain the liquid.

Transfer to a container with the vegetable sauté, mix and fry for about 1-2 minutes.

Pour in hot water, add salt and ground black pepper. Boil everything for about 20-25 minutes until the lentils are cooked.

Meanwhile, cut the bread slices into cubes of any size, drizzle them with the remaining vegetable oil, and place them in a skillet. Fry over medium heat for about 2 to 3 minutes, stirring occasionally. The croutons should brown evenly on all sides.

Rinse and chop the dill, then add it to the boiling soup. Peel a clove of garlic and press it in as well. Mix well and taste the dish. Adjust seasoning if necessary.
