Hearty and aromatic soup. In Spain, dishes made with oxtail are served in almost every restaurant or café. Preparing oxtail soup according to the classic recipe is quite easy. Cover with cold water (2-3 liters) and simmer to make broth for about 2-2.5 hours. 2. Remove the cooked oxtail from the broth. 3. Peel the potatoes and carrots. Wash and dice them, then add to the broth. 4. Peel the onion, dice it, coat with flour, and sauté in olive oil. 5. Add tomato paste to the onion and simmer, covered, for 2-3 minutes. 6. When the carrots and potatoes are almost ready, add the onion with tomato, chopped celery stalks, wine, spices, and herbs to the pot. 7. Remove meat pieces from the oxtail bones and return them to the soup. Season with salt and pepper to taste. Cook for another 10-15 minutes. The soup is ready. Connoisseurs say it tastes even better the next day. Serve the soup hot.
