Broccoli soup in a blender

Description

A hearty first course. I often cook this delicate and very light soup for my younger son. Young children respond very well to puréed soups. Here, the vegetables are masked into a single mass with a smooth, uniform consistency. And the croutons, skillfully seasoned with garlic and spices, make the soup truly unique.

    Peel the potatoes and cut them into strips. Don't worry too much about the size: everything will be mashed into a single mass anyway.

    Separate the broccoli into florets and thoroughly rinse off any dirt. Add to boiling water together with sliced potatoes. As soon as the vegetables begin to boil, reduce the heat and continue cooking for 10 minutes. Check for doneness: the potatoes should be soft.

    Chop the vegetables in a blender until a puree-like consistency is achieved. Add cream, spices, and salt. Then place the soup back on the heat and warm until bubbles appear.

    Pour oil into a frying pan. Cut the baguette into equal pieces. Fry them on both sides and rub with garlic and spices.

    We pour the hot soup into deep soup bowls. Garnish with croutons and fresh herbs.
