
Mushroom soup with noodles

This dish has always been one of our favorites, so every homemaker should know how to prepare it—especially since it's not difficult at all. I'm sharing the simplest recipe for white mushroom soup with noodles, using minimal ingredients and little time. You can make it with dried mushrooms, as I did, or with fresh or frozen ones. Believe me, it will turn out incredibly delicious either way. The soup is ready to serve.

Since we are using dried mushrooms here, they should be soaked in cold water for about half an hour before adding them to the soup. Then we strain the mushroom water through cheesecloth and pour it into a pot, boiling the mushrooms in it for 30 minutes. Carefully remove the mushrooms with a slotted spoon, and strain the mushroom broth several more times.

Now cut the onion into small cubes and sauté in vegetable oil until soft. Add the grated carrots and cook for another couple of minutes, then make space in the center of the skillet and add the minced garlic. Sauté the garlic for about half a minute, then mix everything together.

Cut the boiled mushrooms into small pieces and add them to the pan with the vegetables. Season with pepper, mix well, and fry for 10 minutes.

Peel the potatoes and cut them into cubes. Place them in the mushroom broth and cook until almost done. Add the vermicelli and bring the liquid to a boil.

Now place the sautéed vegetables and mushrooms into the pot, season the soup with salt, and cook until the vermicelli is done, then turn off the heat.

Serve the soup garnished with fresh herbs, with croutons or sour cream.
