
White bean soup with pork
Description
The recipe won't take much time. No matter what kind of beans you use for the soup, the result will be equally amazing! Some people cook this soup using canned beans, which are often red and packed in tomato sauce, while others prefer to boil the beans themselves. I decided to experiment this time and used "borscht" beans, which only need to cook for half an hour. The result delighted not only me as a cook, but also my family. Any beans are equally nutritious and should definitely be included in the diet, even for children, so make a note of this recipe and try it out. Serve in bowls and enjoy.

1. Soak the beans for one hour, then boil them in water with bay leaf and black peppercorns. White beans (especially "borscht beans") cook relatively quickly (within half an hour), so they are preferable for soup compared to red beans.

2. While the beans are cooking, fry the pork belly until golden brown. This type of meat will give the soup a beautiful color.

3. Chop the onion, carrot, bell pepper, and garlic, and add them to the frying pan. To make the soup vibrant and colorful, use different colored peppers—it will be both delicious and visually appealing. For example, if you're making soup with red beans, add yellow pepper; if using white beans, add red bell pepper.

4. The vegetables should only be simmered, not fried until fully cooked.

5. Add the pork to our broth when the beans are tender, and cook for 10 minutes. After that, add the sautéed vegetables. To avoid checking each bean for doneness, simply pay attention to them while cooking: once their skins start to crack, they are ready.

6. Cook the soup for another 10 minutes, stirring occasionally.
