
Lamb and rice soup
Description
The soup is simple and quick to prepare. If you recently had a celebration and cooked lamb for it, leaving behind bones with some meat, you can use them to make homemade lamb and rice soup. This is a fairly simple and light dish, perfect for detox days after various festivities and feasts. The soup turns out incredibly tasty and rich, warming you up when it's cold without leaving a heavy feeling in your stomach. Actually, this simple lamb and rice soup recipe is one of my favorites, so I highly recommend you try it. Serve the soup hot.

So, chop the bones with meat into pieces and place them in a pot, cover with water, and set over low heat. Once the liquid comes to a boil, skim off the foam and simmer the lamb for 1.5–2 hours, covered with a lid.

While the meat is cooking, peel the vegetables, cut the carrots into small cubes, slice the potatoes a bit larger, and finely chop the onion.

After 2 hours, we carefully remove the bones from the broth and separate the meat from them. Then we strain the broth and return it to the pot. When the liquid boils again, we add the pieces of meat, rice (previously rinsed), and chopped vegetables to the broth, season with salt and spices to taste. We cook the soup for another 20–25 minutes, then remove it from the heat.
