
Harcho soup with pork
Description
Perfect for lunch. The Georgian recipe for harcho has been slightly modified to create harcho soup with pork. This delicious and hearty dish will make an excellent lunch for a large family.

We start by thoroughly rinsing the meat, removing any unnecessary parts, veins, and membranes. Cut into medium cubes.

Place the pork in a pot, cover with water, and simmer for about 40 minutes, stirring occasionally and skimming off the gray foam.

Prepare the vegetables. Finely chop the onion, and cut the potatoes smaller than you would for a regular soup. Rinse the rice thoroughly.

After 40 minutes, when the meat is already cooked, add the vegetables to the meat and simmer for another 15 minutes.

Peel the tomatoes by scalding them with boiling water for 1 minute, then place them in a container with cold water for 5 minutes. The skin will then come off very easily. Next, mash the tomatoes or grate them on a grater until they form a paste.

Place the pasta on a preheated pan with oil and simmer for about 7 minutes.

Add the ready-made pasta to the pot with the soup. Cook for another 5 minutes.

Finely chop the herbs and garlic, add to the soup. Turn off the heat, cover with a lid, and let it steep for 15 minutes.
